  1. 1 eachred, green, yellow, and orange bell pepper
  2. 1zucchini
  3. 1yellow squash
  4. 1red onion
  5. 1drizzle of olive oil
  6. 1kosher salt
  7. 2 tbspgarlic powder
  8. 2 tbsplemon-pepper seasoning

Steps

  1. 1

    Small dice veggies.

  2. 2

    Toss with olive oil.

  3. 3

    Season with salt and lemon pepper

  4. 4

    roast at 400º approximately 25 minutes or until veggies are caramelized and tender

  5. 5

    Variations: Fresh chopped herbs, baby carrots, brussel sprouts, eggplant, sweet potatoes, pecans, turnips, squash, poblano peppers, honey mustard, broccoli, green beans, or different dried spices
