Ingredients

  1. 1 1/4 cupsugar (reserve 1/4 cup for crust)
  2. 1/2 cupbutter (melted)
  3. 1 3/4 cupgraham cracker crumbs
  4. 1 largebox black cherry Jell-O (do not follow box directions)
  5. 1 box(8 ounces) cream cheese softened
  6. 1 tspvanilla extract
  7. 1 can(20 ounce)crushed pineapple drained
  8. 1(8 ounce) container of cool whip
  9. 1 cupboiling water

Steps

    Preheat oven to 350°

  2. 2

    Mix together 1/4 cup sugar, graham cracker crumbs and melted butter. Press into 9x13 baking dish. Bake for 15 minutes then cool completely.

    Boil 1 cup of water only for the Jell-O. Add water to Jell-O and stir until dissolved. Set aside and let cool for 15 minutes

    In a large bowl, cream together remaining sugar, cream cheese and vanilla.

  5. 5

    Add cooled Jell-O to cream cheese mixture and blend well. Add cool whip and blend well. Fold in pineapple.

    Spread mixture evenly over cooled crust and chill for 2 hours or until set. Sprinkle graham cracker crumbs lightly over dessert for garnish.
