I wanted to make fried chicken, googled for a recipe, and found this one with 850 reviews and an average rating of 5 stars. Obviously, it piqued my interest.

I made it, and it was everything I had hoped for--crispy, juicy, flavorful!

For your convenience, I added an extra step, in case you wanted to make your own self-rising flour. (I wasn't about to go to the store just to buy it, when I could make it and already had lots of all-purpose flour in my pantry!)

Ingredients

  1. 3eggs
  2. 1 cup(est.) hot red pepper sauce (recommended: Texas Pete)
  3. 2cups self-rising flour
  4. 1 tspground black pepper
  5. 1House seasoning (4:1:1 ratio of salt, black pepper, garlic powder)
  6. 1chicken, cut into pieces
  7. 1frying oil, preferably peanut oil
  8. 1/3 cupwater

    If you want to make your own self-rising flour, take 2 cups all-purpose flour and mix with 3 teaspoons of baking powder and 1 teaspoon of salt

    In a medium sized bowl, beat the eggs with the water

  3. 3

    Add enough hot sauce to make the egg mixture bright orange

  4. 4

    In another bowl, combine the flour and pepper

  5. 5

    Season the chicken with the house seasoning

  6. 6

    Dip the seasoned chicken in the egg mixture and coat well in the flour mixture

  7. 7

    Heat the oil to 350°F in a deep pot. This is important for consistent results. (I used an infrared thermometer, but a food thermometer may be better.) Do not fill the pot more than halfway with oil.

  8. 8

    Fry the chicken in the oil until golden brown and crispy. Dark meat: 13-14 minutes. White meat: 8-10 minutes.

I loved this recipe although I would reduce the ratios because it was very salty
