You could also use nacho cheese, and could omit beans and tomatoes. Less spicy use tomatoes w basil, or just Hamburg with taco seasoning, of course garnish with my favorite cilantro. ( could use jalapeño peppers, hot sauce etc)

Ingredients

5 servings
  1. 1 packagesJumbo shells
  2. 1 lbChorizo sausage
  3. 1 cupChopped onion
  4. 3 cloveMinced garlic optional
  5. 1 can16oz black beans rinsed
  6. 1 packagesYour favorite Mexican cheese
  7. 16 ozyour favorite Mexican cooking sauce ( I use Herdez brand)
  8. 1 can16oz tomatoes w green chile

Cooking Instructions

    Cook pasta as directed

  2. 2

    Cook onion and garlic add chorizo cook until done drain any grease ( pat dry if want)

  3. 3

    Add black beans cook for about 2 min

  4. 4

    Add about 1/4 or 1/2 cup of cheese

  5. 5

    Put a layer of sauce on bottom of 13x9 baking dish

  6. 6

    Stuff shells with meat mixture

  7. 7

    Spoon tomatoes over top of shells along with rest of sauce.

  8. 8

    Add rest of cheese on top

  9. 9

    Bake 350 until cheese is melted
