I need to make warm puddings for my invalid mother-in-law on a daily basis in the winter months. I found this on the BBC Food website and made a few changes.
Steps
- 1
1) Grease a 1litre microwave proof dish and melt the butter on high for 30sec - 1min until melted. Add 2 bananas and mash into the melted butter. Add the flour, sugar, cinnamon, eggs and milk. Mix well together. Slice the remaining banana on top and return to the microwave.
2) Cook on high for 8 min until risen and set.
3) Serve warm with a topping of your choice.
I like using icing sugar with a toffee sauce and ice cream
