Ingredients

20 minutes
2 servings
  • 1 1/2 cupsboiled beans until tender
  • 1 cupboiled maize until tender
  • 1full onion chopped
  • 2tomatoes chopped
  • 2potatoes boiled, peeled and cubed
  • 1/2green chillies
  • 2 Tbspcooking vegetable oil
  • to tasteSalt
  • 1 Tbspdhania
  • 1 clovegarlic

Steps

20 minutes
  1. 1

    Take a sufuria or a cooking pot and add the cooking oil to heat

  2. 2

    Then add the chopped onions to fry until light brown

  3. 3

    Add the chopped tomatoes, garlic and chillies to cook on a low heat until the tomatoes are mushy and soft

  4. 4

    Add the potatoes, stir and allow to cook for 3 to 5 minutes

  5. 5

    Add the mixture of beans and maize, then stir again the mixture

  6. 6

    Sprinkle some salt to taste and simmer for 5 minutes

  7. 7

    Sprinkle dhania on top then cover for 1 minute

  8. 8

    Remove githeri from the heat and serve while still hot
