Ingredients

  1. 1 largeeggplant-diced
  2. 1/2 mediumonion-chopped- I used yellow but u may choose according to prefrence
  3. 1red pepper, chopped
  4. 1green pepper, chopped
  5. 1/2 packagesfrozen cauliflower, broccoli, carrot mix
  6. 1/2 cupsoy sauce
  7. 4 1/2 tbsphoisen sauce
  8. 3 tspchili sauce - more or less depending on your prefrence in the spicey department
  9. 2/3 cupwater
  10. 2 tbspcornstarch
  11. 2 tbspolive oil, extra virgin
  12. 1salt, pepper, garlic powder, sweet dried basil-feel free to add what you desire here

    Im medium saucepan and on medium heat, add a couple tablespoons of evoo

  2. 2

    Add veggies and a little water to pan. Cover and simmer until vegetables are cooked

  3. 3

    While vegetables are cooking, combine hoisen, soy sauce, chili sauce, cornstarch, water and whisk to combine

  4. 4

    When vegetables are cooked through, reduce heat to low and pour sauce over top. Stir to combine. Add seasoning and stir to combine.

  5. 5

    Cover and allow the sauce to warm and thicken

  6. 6

    **note** excellent over brown rice or with added beef, pork or chicken. I intentionally left this sauce and veggie recipe simpke so you can experiment and create your own personilized dish.

Tweaked it a bit... Used 1/4 cup of water, 1/4 cup of tamari, 1 teaspoon sriricha sauce, 1 teaspoon fish sauce, 4 to 5 teaspoons hoisin sauce, 4 teaspoons soy sauce, handfull of fresh purple basil leafs chopped and omitted the sugar. Replaced frozen brocoli, cauliflower and carrots mix by fresh eggplants, zucchinis, mushrooms and bokchoys. Turned out great! 😁 Thx for the recipe 😄😄
