Ingredients

  1. 2 cupCouscous
  2. 2 cupChicken broth
  3. 1 1/2 cupPine nuts
  4. 3 eachCloves of garlic
  5. 1 eachBag of baby spinach
  6. 2 tbspOlive oil
  7. 1 tbspLemon juice
  8. 1 tspSalt
  9. 1 tspPepper

Steps

  1. 1

    Boil water

  2. 2

    Add couscous to boiling water

  3. 3

    Stir and then cover and remove from hear

  4. 4

    Let stand 10 minutes

  5. 5

    In pan heat oil

  6. 6

    Add finely chopped garlic and whole pine nuts

  7. 7

    Cook until brown

  8. 8

    Add spinach and cook until wilted

  9. 9

    Stir in cooked couscous

  10. 10

    Add salt and pepper and lemon juice
