Heat 2 cups of the milk with the sugar in a saucepan over medium heat until hot, but do not let it boil.

In a separate bowl, mix the remaining 1/2 cup milk with the cornstarch, cocoa powder, and vanilla. Stir until completely smooth.

Add this mixture to the hot milk and sugar on the stove. Using a whisk, stir constantly until the pudding thickens. Remove from heat and pour into serving cups.

Note: If lumps form while cooking, you can strain the pudding after it's done. However, I didn't have any lumps when I made it.

You can layer the pudding with whipped cream, then more pudding, and top with more whipped cream and grated chocolate. Alternatively, use crushed cookies or nuts instead of cream, or simply serve the pudding plain as shown in the photo. Any way you decorate it, it will be delicious!
