Ingredients

  1. 1 cupquinoa
  2. 2 cupwater
  3. 1/4 cupolive oil (I use extra virgin)
  4. 2limes juiced, about 1/4 cup
  5. 2 tspground cumin
  6. 1/4to 1/2 teaspoons crushed red pepper flakes
  7. 1 1/2 cupgrape or cherry tomatoes
  8. 1/4 cupchopped fresh cilantro
  9. 1/4to 1 teaspoon salt, to taste ( I use 1/4 teaspoon)
  10. 1/4to 1/2 teaspoon black pepper, to taste
  11. 5green onions, finely chopped
  12. 1(15 ounce can) black beans, drained and rinsed (I used reduced sodium)

    Bring quinoa and water to a boil in a saucepan.

  2. 2

    Reduce heat, cover and simmer until tender and water has been absorbed, 10 to 15 minutes.

  3. 3

    Set aside to cool.

  4. 4

    Whisk together in a bowl the olive oil, lime juice, cumin and red pepper flakes.

  5. 5

    Combine quinoa, tomatoes, black beans and green onions together in a large bowl.

  6. 6

    Pour dressing of choice over quinoa mixture.

  7. 7

    Toss to coat.

  8. 8

    Stir in cilantro.

  9. 9

    Season with salt and pepper if desired.

  10. 10

    Serve immediately or chill in the refrigerator.

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
