Ingredients

  1. 6 mediumsized potatoes, cubed
  2. 8 largeeggs
  3. 1 tbspCilantro, finely chopped
  4. 2Green onions, chopped
  5. 1Garlic clove, minced
  6. 6Strips bacon, chopped
  7. 1 dashGarlic salt
  8. 1 dashPepper
  9. 1 dashOnion powder
  10. 1 dashMild Jalapeño juice
  11. 2 cupGrated sharp cheddar
  12. 1/2 cupUnsalted butter

  1. 1

    Start by washing potatoes. Cut potatoes into cubes. Rinse and boil in a medium sized pot until slightly tender.

  2. 2

    While the potatoes are boiling start cooking bacon on a skillet.

  3. 3

    Chop cilantro, green onion and mince garlic. Grate cheddar cheese. (Optional: use pepper jack in addition or instead). When bacon is finished let cool and then chop.

  4. 4

    Once potatoes are tender, drain and then put back into rinsed pot. Add butter, eggs, pepper, onion powder and garlic salt. Allow egg to cook thoroughly on medium heat.

  5. 5

    When eggs are finished, add jalapeño juice bacon and cheese. (At this point I like to also add a fresh jalapeño, chopped. This can make it pretty spicy and because of this it is completely optional) once cheese is melted, stir. Add more garlic salt and pepper to taste.

    Spoon onto plates and enjoy!
