In a bowl, beat the egg, sugar and salt using a whisk until the mixture is pale.

Add in the oil, few drops of food color, orange juice and zest and mix just until incorporated.

In another bowl, mix the flour, baking powder and baking soda. Add this to the liquid mixture.

Mix it using the whisk until batter is smooth, don't over-mix.

Divide the batter equally in 6 lined cupcake tins.

Put a large pot on stove. Place a small aluminium or steel bowl in it and put another flat plate on the small bowl.

Place the cupcake tins on the plate and cover the large pot with a lid.

Put the flame on high for 5 mins, then turn down to medium for 10 mins and medium low for 5 more minutes.

After 20 mins, check the cupcakes. The top of the cupcakes should spring back. Don't overbake.

Cool the cupcakes down to room temperature, frost and eat or enjoy them while still warm.
