Ingredients

  1. 4-5 lbsboneless pork loin
  2. 1 Tbspgarlic powder
  3. 1 Tbsponion powder
  4. 1 bunchparsley, chopped
  5. 1 Tbsprosemary
  6. .5 Tbspolive oil
  7. 1 tsppepper
  8. 10garlic cloves, chopped
  9. 2 lbspotatoes, quartered
  10. 4-6carrots, chopped
  11. 1large yellow onion, quartered
  12. 8 ozbeef broth

Cooking Instructions

    Preheat oven to 325° F.

    Place pork loin fat side down in a baking pan (9x13) with vegetables around it.

    In a separate bowl mix garlic powder, onion powder, and pepper until combined and rub it onto the pork (top only, not the bottom). Sprinkle left over seasonings over vegetables.

    Add the parsley and garlic and then drizzle the olive oil over everything.

    Add the beef broth to the vegetables, do not pour over pork.

    Place foil, slightly vented, over the pan. Cook it on 325° for 2.5 hours.

    Let meat rest for 30 minutes before serving.
