Spicy veggie & quinoa salad

Ingredients

  1. 1 cupquinoa
  2. 1 mediumred bell pepper, diced
  3. 1 canblack beans, drained
  4. 1 candiced tomatoes with jalapeños
  5. 1/2 cansweet white corn, drained
  6. 1 tspcilantro, dried
  7. 2 clovegarlic, minced
  8. 1 packagesMcCormick hot taco seasoning mix
  9. 1/3 cupsour cream
  10. 1/4 cupgrated cheese

Cooking Instructions

    Rinse and cook quinoa as directed on packacge.

    In large skillet, combine all other ingredients (excluding cheese and sour cream for topping). Bring to a boil. Then reduce heat and cover, stir occasionally.

    When quinoa is done, fluff with fork, place a serving size on plate and smother with vegetables. Top with grated cheese and sour cream, enjoy alone or with tortilla chips!
