Ingredients

  1. 3 tbspShortening
  2. 4 tbspAll-Purpose Flour
  3. 3/4 cupOnion, coarsely chopped
  4. 1/2 cupGreen Pepper, coarsely chopped
  5. 2 lbChicken, boneless and skinless
  6. 3/4 lbSmoked Sausage
  7. 2 cupwater
  8. 1 lbshrimp
  9. 1/2 tspsalt
  10. 1/2 tspblack pepper
  11. 1/4 tspRed pepper flakes, crushed
  12. 1/4 cuptomato paste
  13. 1/4 cupgreen onion
  14. 1 cupokra, cut into 1/2 inch pieces
  15. 1 tspfile (optional)
  16. 4 cuprice

Cooking Instructions

    Melt shortening in large saucepan or kettle over moderate heat. Stir in flour and continue stirring until mixture turns light brown.

    Add onions and green peppers and stir until well mixed. Continue to stir on occasion for about 5 minutes until vegetables are crisp and tender.

    Add chicken and sausage and stir in water. May need to add more water if mixture appears thick. Cover pan and simmer 35 minutes.

    Add shrimp, salt, black pepper, tomato paste, green onions, and okra. Add more boiling water if necessary. Cover pan and simmer for 15 minutes.

    Add file just before serving over hot rice.

Parents forced me to cook at age 7, been loving it ever since.Be warned, my tolerance for spicy is higher than average, but I do try to adjust spice in my recipes to suit more average taste.
