Steps

Heat oil, put rai, jeera, hing, curry leaves.Then add crushed garlic and green chilies. Saute for 2 mins. Put baingan aloo and whole onion.....mix it.

Add salt,turmeric powder,red mirch powder,dhania powder. Mix well and cover till potatoes r tender. Then add crushed/ grated tomatoes. Cover and Cook till done.

Garnish with coriander leaves.
- 4
Serve with choice of your roti / salads / pickles.
