Blanch the chicken drumsticks in boiling water, then rinse well. Marinate for 20-30 minutes with seasoning powder, MSG, fish sauce to taste, and a little sugar (optional). Smash 1 1/2 pieces of ginger (or slice into thin strips for a nicer look). The more ginger, the better the flavor.

Heat a little oil in a pan and sauté the garlic until fragrant. Add the remaining ginger, then add the marinated chicken. Stir gently. Cook over high heat until the chicken firms up and turns a nice color.

Add 1/4 cup water (about 60 ml), reduce to medium heat to help the chicken become tender inside. Stir gently. You can also add a splash of soy sauce if you like.

Taste and adjust the seasoning. When almost done, add thinly sliced lime leaves and black pepper. Stir well and turn off the heat.

Serve with steamed white rice. This chicken goes perfectly with rice and a side of water spinach soup with pickled dracontomelon. Good luck!

Tip: Use free-range chicken for the best flavor. Fresh local ginger and garlic are ideal. Mature lime leaves give the best aroma.
