Healthy Sweet Potatoes with Apples

I had a lot of apples left over from apple picking and thought I'd try to incorporate them into my meals to finish them off. I knew that adding rosemary and thyme to sweet potatoes would enhance their flavor. But the addition of bright punchy apples, with cinnamon and fresh ginger, added a whole new level of sweetness to an autumn favorite. And the best part is that there's no need to add sugar or syrup to get that amazing sweet potato holiday flavor.

Preheat the oven to 350°F for baking.

Dice up the sweet potato into a pile of 1" wedges and throw into a medium bowl. For easy cooking, they shouldn't be more than 1/2" thick.

Peel, core, and dice up the two apples into small 1/2" cubes. Throw into the same bowl with sweet potatoes.

Finely chop the rosemary and thyme together, then finely chop the fresh ginger. Throw all the fresh and dry spices into the same bowl with the main ingredients.

Pour extra virgin olive oil into the bowl and thoroughly mix everything together. Optionally you can throw everything into a large tupperware, cover, and shake well to mix the ingredients.

Spread ingredients onto a large flat pan and bake at 350°F for 45 minutes or until soft.

When done, center on pan, then scoop onto plate, and serve with protein of your choice.
