Homemade Ricotta Cheese

I always feel like I buy a tub of ricotta and only use it for one recipe. The rest just goes to waste and molds in the fridge. So this time I tried making my own and it turns out it is simple, easy and delicious. I'll never buy grocery store ricotta again. The higher quality dairy you use the better it will be. This recipe also only makes about two cups but is so easy to multiply.

Steps
- 1
Mix all ingredients in a saucepan
- 2
Simmer on low about five minutes or until milk curdles.
- 3
Strain curds and whey through a cheese cloth lined strainer (a paper towel works in a pinch).
- 4
The longer you let the cheese drain in suspended cheese cloth, the drier the cheese will be.
- 5
Voila! Easy cheesy. See my recipe for veggie lasagna made with this ricotta!
