Ingredients

1 hour 30 mins
10 servings
  • 4 tbspolive oil
  • 1 mediumsweet onion (vidalia) chopped
  • 8 clovegarlic, minced
  • 3 cangreen chilie
  • 3 cupcooked, diced chicken
  • 1 1/2 gallonchicken broth ( it's soup the exact amount isn't critical)
  • 8roma tomatoes, diced
  • 2 cansweet corn (drained)
  • 1 bunchcilantro
  • 1/2 tspground cumin
  • garnish
  • 1diced avacado
  • 1sour cream
  • 1tortilla chips
  • 1monterey jack cheese
  • 1lime wedges

Steps

1 hour 30 mins
  1. 1

    Simmer first four ingredients over medium-low heat for a few minutes until onions are translucent. (Fresh green chilies are amazing but often add too much heat so be careful that they are mild if you use fresh.)

    Add chicken, chicken broth, chopped tomatoes, and canned corn. ( this is the only thing I use canned corn for, you can use fresh or frozen but canned corn is sweeter so it is recommended)

  3. 3

    Cover and Simmer for 30 minutes

  4. 4

    Add cilantro and cumin. Simmer for 10 more minutes.

  5. 5

    Place a handful of chips in a bowl, top with perhaps a couple tablespoons of cheese, and ladle soup over chips. ( I eat mine without cheese to cut calories, but the cheese makes it simply decadent)

  6. 6

    Garnish with avocado and/or sour cream if desired. Add lime wedge and serve.

  7. 7

    Every ingredient is crucial. If you don't like cilantro make a different recipe. I have never modified this recipe; it is simply too perfect as is.
