For stuffing:Daal ko pani me for2-3 hours soak karein. Phir pani nikalkar daal ko bina paani dale coresaly grind kar le.

Now ek kadai me oil dale or hing,jeera add karein crackle hone par daal dale. Now daal ko ache se bhun le.

Har 2-3 min ruk ruk kar ase hi chalate rahe aise tab tak karein jab tak daal bhun na jaye.

Now isme red chilli powder,crushed sauf,coriander, haldi,garam masala,salt aamchur daalkar thodi dair aur bhune flame slow hi rhkni hain.

Kachori base:Now maida mein oil salt add karein or hath se masle.

Now maida ko hath me lekar deke agar wo bhikarta nahi hai toh wo theek hai isme thoda toda pani daalkar tight aata lagale.

Now aate ko haath se parat me ache se beat karein phir 1/2 hour ke liye dhkkr rhk de.

Now choti loi lekar hath se flat karein or bowl ka shape de or isme daal ki stuffing bhar kar corners ek saath karein mod ke hath se press kar lein.

Ab inhe slow flame par halke garam oil me golden brown hone tak fry karein.

Kachori ready hain.

Dubki aloo:Ek kadai me oil garam karein.Now usme jeera, hing add karein and crackle hone de,green chillies, ginger b dale.

Add garam masala and all spices add krdo,isme desire water add karo or potatoes ko toda mota tod ke dalo and ek potato ko ekdum mash kar ke dalo or boil hone do ache se chopped coriander add karo ready hai sbji.

Note:kachori ko hlake garam oil me hi fry karein and jise side se kachori ko pack kra us side se hi oil me dale or jab cook hojaye wo side tab hi flip karein...isse kachori khulegi nahi.
