Ingredients

  1. 1 cupsugar
  2. 1 tbspgrated lemon rind, or 1/4 teaspoon lemon extract
  3. 1 cup(2 sticks) unsalted butter, room temperature
  4. 1egg
  5. 2 3/4 cupflour
  6. 1/2 tspsalt
  7. 1 tspvanilla extract ( I use extra )
  8. 1/2 cupseedless raspberry jam

Steps

  1. 1

    Preheat oven to 350°F.

  2. 2

    Lightly grease baking sheets or line with parchment.

  3. 3

    In a large bowl, beat butter, sugar, lemon rind or extract, vanilla and salt until very light.

  4. 4

    Beat in egg.

  5. 5

    Add flour, stirring until well blended.

  6. 6

    Roll into 1 inch balls and arrange on cookie sheets at least 2 inches apart.

  7. 7

    Use fingertip or thumb to put indentation into center of each.

  8. 8

    Bake for 12 to 14 minutes.

  9. 9

    Let cookies cool about 5 minutes to firm up, then move to a rack.

  10. 10

    When completely cool, fill indentation with jam, using 1/4 to 1/2 teaspoon per cookie.

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
