The sauce for these ribs is simular to Carolina BBQ. I've added a California style twist to it by adding chiles and mexican hot sauce. The vinegar in the sauce really helps to break down the connective tissue in the meat, making these ribs very tender.

Ingredients

  1. 1Full Rack of Pork Ribs
  2. rub
  3. 2 tbspsalt
  4. 2 tbspground black pepper
  5. 3 tbspdried onion flakes
  6. 1 tbsppaprika
  7. 1 tspcrushed red pepper
  8. 1 tspgarlic powder
  9. 3 tbspolive oil
  10. Sauce
  11. 3 smallwhole dried chiles. Such as Chiles Japonesas or Chile de Árbol
  12. 1/4 cupWhite Vinegar
  13. 3/4 cupYellow Mustard
  14. 3/4 cuphoney
  15. 1/2 cuplight Brown sugar
  16. 1 tspMexican Hot Sauce such as Valentina or Tapatío

Steps

  1. 1

    Remove the stems from the dried chiles. Place the chiles in the white Vinegar

    Mix together the dry seasonings for the rub.

  3. 3

    Rub the rack of ribs with the Olive oil

  4. 4

    Rub the spice mix onto the ribs.

    Preheat oven to 400°F

  6. 6

    In a blender mix together the mustard, honey, brown sugar, mexican hot sauce, and vinegar with the chiles in it.

    Blend until all the sauce ingredients are formed into a smooth sauce.

    In a small sauce pot, bring the sauce to a simmer for about 10 minutes. Stirring constantly with a wooden spoon to keep the sugar in the sauce from burning.

    Place the ribs into the preheated oven and cook for 1 hour.

  10. 10

    After the ribs have cooked for an hour, brush with your sauce.

  11. 11

    Cook ribs for another hour, brushing with sauce every 15 minutes.

  12. 12

    Ribs can also be cooked on the grill. Either method is TASTY! After removing ribs from heat, let them rest for about 10 minutes to allow the juices to recess back into the meat.
