Ingredients

  • 1 lbSausage, Chorizo
  • 2 cupLentil
  • 3 cupKale
  • 4 cupVegetable Stock
  • 1 eachMedium Onion
  • 2 eachCarrots
  • 2 eachCelery
  • 3 clovegarlic cloves
  • 3 tbsptomato paste
  • 1 tbspolive oil

Steps

2 hours
  1. 1

    Rinse lentils at least 3 times until water runs clear.

  2. 2

    Brown Chorizo with olive oil.

  3. 3

    Add vegetables and cook until tender.

  4. 4

    Add vegetable stock, tomato paste, and rinsed lentils.

  5. 5

    Simmer for at least 90 mins until lentils are tinder.

  6. 6

    Add chopped kale and cook for another 30 mins.
