Parboil in salted water (or steam) for approximately 5 minutes.

Cool, then shred into large flakes on a grater.

Heat the oil or butter in a frying pan.

Add the potatoes, and season lightly with salt and pepper.

Press the potato together and cook on both sides until brown and crisp.

Serve while hot with a cup of coffee.
