I had an eggplant but wanted to hide it in something and since I was on a zucchini bread binge I added it here. And it worked really well! U can't taste the eggplant itself but it goes well in this.

Ingredients

  • 4 largeeggs
  • 2/3 cupgranulated sugar
  • 1 cuplight brown sugar
  • 1/2 cupmelted butter, cooled
  • 1/2 cupcanola oil
  • 1 tbspvanilla extract
  • 1 cupseeded, grated, unpeeled zucchini
  • 1 cupmashed banana
  • 1 cuppeeled, grated eggplant (seeds are ok)
  • 2 1/2 cupall-purpose flour
  • 1 1/2 tspground cinnamon
  • 1/4 tspground ginger
  • 1/4 tspground nutmeg
  • 1 tspbaking soda
  • 1/4 tspbaking powder
  • 1/2 tspsalt
  • 1 tsplemon zest (fresh is best)
  • optional:
  • 1/2 cupchopped walnuts, pine nuts or dried cranberries
  • topping:
  • 1/2 cupgranulated sugar for sprinkling, also optional.

Steps

    Preheat oven to 325°F

  2. 2

    Place zucchini, eggplant, banana and zest in a large bowl. Add eggs and both sugars. Wisk well.

  3. 3

    Wisk in butter, oil and vanilla. Set aside.

  4. 4

    In a medium bowl sift or wisk together flour, salt, baking soda, baking powder, cinnamon, nutmeg and ginger.

  5. 5

    Add dry to wet and stir until incorporated. Fold in nuts or cranberries if desired.

  6. 6

    Divide the batter between two smaller sized greased or sprayed loaf pans.

    Sprinkle tops with sugar.

  8. 8

    Bake for 45-60 minutes or until toothpick inserted into center comes out clean.

  9. 9

    Cool and serve.
