  1. 1Sweet mini peppers
  2. 1 largewhite onion
  3. 1/2 candiced green chili
  4. 3 clovegarlic
  5. 1tomato sauce
  6. 1chili powder
  7. 1smoked paprika
  8. 1cumin
  9. 1 packagesboneless pork loin back ribs cut
  10. 1queso fresco

    First julienne the onions and put a nice chop on the sweet mini peppers, also mince your garlic.

    Before we sweat down our veggies we are gonna sear our pork at the bottom of the hot chefs pot.

    Next were going to sweat down the peppers, onion and garlic in some olive oil. Until they are nice and soft

    Now we're gonna hit the veggies with a lot of chili powder. Some smoked paprika, salt, pepper, cumin and a cup of tomato sauce and the diced green chili

    Let's get the rice going. It'll be done in 12 minutes

    We let the veggies simmer in this chili sauce for 30 minutes and then we drop in our seared pork and finish it in the sauce. Cooking the pork to medium

    We're plating the Chile pork sauce over some nice boiled white rice. Top with queso fresco

I am a home cook with a flare for perfect technique. I started my love for cooking on the grill. It then ventured into the kitchen where I made my first BBQ sauce. It was then I knew I wanted to create all my sauces from scratch. It snowballed from that point on. Now I strive for flawless plating and vast depths of flavor. Sometimes I'll set a timer to 20 minutes and challenge myself "Chopped" style. I tend to keep my flavors close to my heritage, latin. Though I love to cook every cuisine from all around the globe to really stretch my abilities.
