Mexican French Toast Rolls
This recipe was from Pati's Mexican Table.... I saw it and it seemed so easy and a good way of using old bread... My hubby and I loved them!!!
Steps
- 1
trim just the crust off of your bread...
- 2
then flatten them with a rolling pin, until flat..
- 3
in a shallow bowl mix the egg and milk and beat.
- 4
put 1-2 T of filling in the center of the bread. you don't want it on the edges because when u roll it it will ooze..
- 5
roll the bread like an enchilada or like a cigar.
- 6
in another bowl put sugar and cinnamon and mix well.
- 7
place a skillet on med heat and melt 1 - 1 1/2 T butter....
- 8
roll the bread rolls in the egg mixture.. let excess egg wash run off and place seam side down.. allow to become golden and then turn over and allow to brown on other sides.
- 9
*** I actually ran my fingers down the roll to remove access egg wash.
- 10
remove from skillet and roll in cinnamon and sugar mix.
