My mother doesn't like pork loin chops or steak as she says they're too dry so I came up with this recipe and she loves it. I loved it too.

My mother doesn't like pork loin chops or steak as she says they're too dry so I came up with this recipe and she loves it. I loved it too.

Chop onion and garlic finely and mushroom to desired size.

If using chops remove meat from bone. Chop pork into slices

Heat a deep pan with a little oil until smoking. Add onions, garlic and pork and brown for a few minutes.

Add the mushrooms then a few minutes later add the stock and milk. I used chicken stock but would have probably worked better with pork if available,:-)

Allow to simmer for 10 minutes the sauce should have reduced and thickened by that time. You can add a little bit of plain flour to help thicken if desired.

Now you can dish up. Enjoy!
