Ingredients

6 people
  • 1 tablespoonolive oil
  • 1onion, chopped
  • 2garlic cloves, peeled and crushed
  • 3/4 teaspoonground cinnamon
  • 1.5 cupsred lentils, rinsed
  • 1.5 tablespoonstomato purée
  • 400 gcan chopped tomatoes
  • Salt
  • Freshly ground black pepper

Steps

  1. 1

    Fry the onion, garlic and cinnamon in the olive oil until well softened.

  2. 2

    Add in the lentils, tomato purée and canned tomatoes. Stir.

  3. 3

    Add in enough boiling water to allow the mixture to flow.

  4. 4

    Simmer for 20-25 minutes until the lentils are cooked (adding more boiling water as required).

  5. 5

    Can be served as a pasta sauce topped with cheese or like a veggie shepherds pie topped with mashed potato
