Ingredients

4 servings
  1. zucchini
  2. 2 largezucchinis
  3. dressing
  4. 2 tbspfresh lemon juice
  5. 1 tbsplemon zest
  6. 1salt
  7. 3 tbspolive oil, extra virgin
  8. 1 tspparsley flakes
  9. toppings
  10. 1/3 cupgrated parmesan cheese
  11. 2 tbsproasted pistachios

Steps

  1. 1

    Wash the zucchinis. take a vegetable peeler, or mandolin and slice long ways into ribbon thin slices.

    Zest and Squeeze the lemon. To that add oil, salt, and parsley flakes. Mix well

    Toast the pistachios. Add the dressing to the zucchini. Add pistachios and grate the cheese over the top.
