Ingredients

  1. Wet
  2. 1 largeegg
  3. 1/3 cupbutter(melted)
  4. 3/4 cupgranulated sugar
  5. 1 largemashed banana (preferably overripe)
  6. Dry
  7. 1 1/2 cupself-rising flour
  8. 1/2 tspsalt
  9. 1 tspbaking soda
  10. 1 dashground cinnamon
  11. 1/3 cupoats

    Preheat oven 350°F.

  2. 2

    Grease muffin pan with light olive oil.

  3. 3

    Add the flour, salt, baking soda, cinnamon and oats to a large bowl.

  4. 4

    In a separate, smaller bowl, add the butter first and microwave until melted ( around 20-30 sec).

  5. 5

    In the same bowl, add the egg, sugar, and mashed banana.

  6. 6

    Blend mixture until smooth with the mixer on the lowest setting.

  7. 7

    Gradually add the wet mixture into the larger bowl, and stir until completely blended.

  8. 8

    Pour mix into the muffin pan and bake for 25 min.
