Fry the sausage(with lil or no oil) and dice into circles and keep then cut ur plantain into small circles, fry and keep

Wash the veggies nd slice seperately but the peppers must be sliced in thin stripes Chop the onions and crush the garlic. On low heat, Heat up less than a cooking spoon of groundnut oil.Saute the onion for 20 seconds, add the garlic and stir for 5 seconds... Add the fresh tomatoes and red pepper(reserving like 5 stripes for later) stir fry for 4 mins, pour the diced sausage, add the curry thyme maggi nd a pinch of salt. Stir fry for a min or two so the seasoning can saturate

Add the green pepper(reserving 4-5 stripes) stir for the last time and take it dwn. Break the eggs into a bowl. Add a pinch of salt to taste. Pour the sauted mixture into the bowl and stir. Now with a clean fry pan, and,on low heat, heat up 2 table spoons of oil, pour in the mixture, and carefully place the plantain till it covers the whole pan.

Sprinkle the reserved peppers on top and cover your fry pan and leave for 20-25mins until u sure the egg is all caked.

When that is achieved, Turn off heat and serve. Yummy right?
