I was in Eugene, Oregon at the Famers Market, I stopped at a little Tamale Stand, she had Several different kinds of Tamales...They were FABULOUS!!! So I tried doing some myself and came up with this recipe. ENJOY!

Ingredients

  1. Pork Filling
  2. 4 quartWater
  3. 6 cloveGarlic
  4. 2 mediumOnion Chopped
  5. 1/2 cupChili Powder
  6. 1/2 cupMole
  7. 1 cupGreen Chilli
  8. 1/4 cupPaprika
  9. 4 tbspChicken bullion
  10. 5 lbPork shoulder roast
  11. 1 1/2 cupGreen Olives
  12. 1 cupGolden Raisins
  13. 1 tbspPowdered Clove
  14. 1/2 cupSugar

Cooking Instructions

  1. 1

    Place Pork in a large pot with 3 quarts of water. ADD all the dry ingredients. The onions, garlic, & green chillies. BRING TO BOIL. Then turn the pork mixture down to simmer for approximately 3 hrs, or until Roast is tender and falling apart.

    About 30 min. Before you are ready to make the Tamales, Add the Olives and the Raisins. Mix well pull the Pork apart as you mix it. Now your Ready to make the Tamales!

    Make your Masa or Tamale corn meal, while the Pork is cooking. Set it aside.

I had the very same tamales at a festival in Eugene, OR back in the late 90's and after moving to Georgia in 2001 I actually spent an entire Friday hitting every supermercado in Athens, GA hoping to find the same tamales. Never found them. So I was thrilled just now to Google a tamale recipe with raisins and olives and have your recipe pop up mentioning Eugene!
