Simple family dish to make. I like to use a piece of pork with a bit of fat on it because it won't become so dry.
Cooking Instructions

Slice the pork about an inch deep 3 to 4 times on the non-fat side.

In a medium/large oven proof tray place the pork (it's easier as you won't need to transfer it later).

Marinade the pork with all the ingredients and leave to absorb the marinade overnight in the fridge.

Remove from the fridge about an hour before cooking.

When it's time to cook pre-heat the oven to 160°C/320°F.

Cook for 2 hours to 2 and half hours on low.

Turn over every hour and baste.
- 8
Once cooked cover in foil and let it rest for 20 minutes.

Cut pork into slices.
