Ingredients

1 hour
8 servings
  • 1 lbGround beef, extra lean
  • 2 tbspOlive oil
  • 1 smallOnion, chopped
  • 5 cloveGarlic, smashed and minced
  • 1 canDiced tomatoes
  • 1 canTomato sauce
  • 1 canRed Kidney beans
  • 1 canPinto beans
  • 2 cupBeef broth
  • 3 tbspChili seasoning (see my recipe for Natural Chili Seasoning)
  • 1 1/2Cheddar cheese, shredded (optional)

Steps

  1. 1

    In a large pot heat the olive oil on medium-high.

  2. 2

    Sauté the garlic till it just becomes gold on the edges.

  3. 3

    Add the garlic and cook with the onion for 3-5 minutes.

  4. 4

    Transfer the onion and garlic to a bowl.

  5. 5

    Brown the ground beef in the same pot.

  6. 6

    Once there is no more pink in the meat, return the onions and garlic back to the pot. Reduce heat to medium low.

  7. 7

    Add all the other ingredients except the seasonings, stir, cover and simmer for 20 minutes.

  8. 8

    Add the seasonings and mix well. Cover and continue to simmer for 15 minutes.

  9. 9

    Serve in bowls and garnish with the shredded cheddar.
