A quick healthy and light snack. I prefer a little more heat so I garnished with a little sriracha for the extra kick!! Perfect for spring!
Lemon pea spread on toasted baguette
A quick healthy and light snack. I prefer a little more heat so I garnished with a little sriracha for the extra kick!! Perfect for spring!
Cooking Instructions

Put your peas, parsley, garlic and half of the lemon zest in a pan with the 1/2 cup water.

Cook on a medium low heat for about 3 to 4 minutes.

Strain the pea mixture and save the cooking liquid.

Place the pea mixture into a food processor and pulse mix for about 30 seconds or until you get a rough paste.

Place the mix into a bowl

And the rest of your zest, along with the lemon juice, extra virgin olive oil, chili flake, and green onion.

Mix together with a rubber spatula or spoon. Still making sure it's chunky

Add your cooking liquid slowly and little at a time till you get a result you can apply to bread...(you don't have to add all of the liquid, just enough to get the consistency you like)

Add salt and black pepper to taste

Apply to toasted baguette slices or bread of choice. Can be made up to 24 hours in advance but better fresh.

Garnish with lemon and some extra chili flakes

So I tried it out, and the result was an aromatic French baguette with the subtle fragrance of soy sauce.After making several baguettes and testing out various things, I found out that it's best to heat the soy sauce and water as in step 1 to prevent the dough from getting too loose; it makes the dough much easier to handle. Since the dough contains soy sauce and sugar, it turns brown quite fast. So I divided it into two portions and made 2 thin baguettes, but you could make one big baguette instead.
