My husband loves this and I haven’t cooked a lasagna noodle in decades lol

Ingredients

  1. 6-9uncooked lasagna noodles
  2. 1 1/2 lbGround beef
  3. 1large 24 oz container small curd cottage cheese or ricotta
  4. 1 quartSpaghetti sauce of choice, mine is doctored and store bought
  5. 3 cupMozzarella cheese, shredded
  6. 1 cupParmesan cheese, grated
  7. 2Eggs
  8. 1Salt pepper garlic and onion powders and Italian seasoning

Cooking Instructions

    Preheat oven to 350

    Brown ground beef and drain. Add marinara sauce and half a jar of water. Shake water in jar to clean all sauce from the jar. Add any seasonings you like at this point.

    Empty cottage cheese or ricotta in a bowl. Add 2 eggs, half a cup of parm, and a handful of mozzarella, salt pepper garlic and onion powders and Italian seasoning and mix well.

    In a large casserole, spread some sauce in bottom then layer uncooked noodles to fit on top of that. Add more marinara making sure to cover the noodles completely each layer. On top of that add a layer of cottage cheese and on top of that a layer of mozzarella and parm. Add another layer of uncooked noodles and repeat layers til done. Cover top with remaining cheese.

    Cover with aluminum foil and bake for 30 mins then uncover for 15 more.

Any recipe I have can be made the old fashioned way OR replaced with lower carb options. Just ask and I’ll tell you what has worked for me.I’m the self proclaimed queen of the leftover. I have issues with leftovers looking back at me with the same sappy look they had the day before. Can’t do it. My super power is turning what I find in my fridge into something I want to eat. I work so much better under pressure. I live for shortcuts and not having to run to the grocery every day. Work with what you have. Adapt and overcome. Also, the less dishes, bowls, and pots I hafta use, the better. Hope some of these recipes work out for ya!
