Puree the chipotle peppers

In a 16qt pot add the oil, when hot add the garlic and cook for a minute or untill aromatic.

Add rice and the chipotle peppers with the adobo sauce and mix till rice is bright red, let sit for another minute.

Add water and mix rice.
- 5
Bring to boil, once the rice is at the same level as the water reduce fire to medium low heat, cover and let cook for 20 minutes
