Pan-Baked Castella from Guri & Gura

I loved the picture book "Guri and Gura" when I was a kid. Now I have a daughter of my own who's almost three years old... When I decided to buy her this picture book, I wanted to try making the castella they make in the book. My daughter loves to eat and I'm sure she'll love both the cake and the picture book.
According to the daughter of Mrs. Yamawaki, who illustrated the picture book "Guri and Gura," the castella cooked in a pan should puff up, just like it did in the story. And it's true -- the one we made puffed up pretty evenly. Of course, if you use a shallow pan or one with a low lid, the castella will stick to the underside of the lid. I recommend using a wok! For the size of a frying pan. Recipe by Mimi-nee

Cooking Instructions
- 1
Prep: Sift the flour. I used shortening instead of milk, because my friend's child is allergic to milk.
- 2
Separate the egg yolks and whites, and put the egg whites in the refrigerator for about 30 minutes to chill. *This is because it's easier to beat the egg whites when they're chilled.
- 3
Add sugar to the chilled egg whites and beat together until the mixture is creamy (if it's nicely chilled, this will take about 5 minutes with an electric mixer!!). Then mix the melted butter, egg yolks and milk together. Add slowly into the bowl with the egg whites and sugar, and mix it all together.
- 4
Add sifted flour and mix the batter well.
- 5
Pour the batter into a pan, cover with a lid, and then cook it for 30 minutes on the lowest heat. Every now and then (2~3 minutes) remove the pan off the heat and cool on a damp towel for a few seconds to prevent the castella from burning.

Castella Cake Castella Cake
I used user "Bekuchin"'s recipe and changed the order to make it easier for me to make, because the first time I made it I found it hard to mix the flour into the egg yolks...It's made almost the same way as chiffon cake.If the bowl is not completely clean and dry when you make the meringue, the egg whites will not form stiff peaks. Be sure to wash and dry the bowl before use. When I put the egg whites over hot water, I use the "keep warm" setting on my induction stovetop. Three minutes at this setting is just right. Then, I take the bowl off the hot water, and beat the egg whites. Recipe by Rikkurutomosumosu cookpad.japan -

Made in a Pound Cake Mold! Fluffy and Moist Castella Made in a Pound Cake Mold! Fluffy and Moist Castella
After talking with my father about castella, I had a craving for some. I checked a cooking book, but since the recipe was different from what I wanted, I adjusted it to come up with my own.All of the ingredients must be brought to room temperature. Whisk the egg white well. After adding flour, mix evenly, but do not mix too much. It's best to serve 2 days after baking. The first day is too fluffy. For best results, the parchment paper should be smooth, without any wrinkles. For two loaf pan: 18 x 8 x 6 cm [7 x 3 1/4 x 2 1/4 in]. Recipe by Myumako cookpad.japan -

Greek Custard Pie (Bougatsa) Greek Custard Pie (Bougatsa)
I’ve been working on my baking skills this week, mainly because the holidays are coming up. I haven’t made any Christmas Cookies or Cakes these past few years, so as I’m sitting here thinking what should I add to my Christmas baking list. 🙂I have wanted to make this pastry for a while and I found Semolina at the supermarket so I gave it try yesterday and it turned out so creamy and delicious. This Custard pie a popular breakfast pastry in Greece as the bagel is in the US…:) This pie’s origin is from Northern Greece a city called Serres, and become very popular in Thessaloniki and then expanded to the rest of Greece. It is eaten warm with sugar powder and cinnamon sprinkled all over. Yummmyyyy!!! I forgot to mention that there is also another version of this pastry with a cheese filling.. I have tried it but it reminds me of eating a Cheese puff (Tyropita) rather than the sweet taste of custard…:)You can find shops/bakeries all around Greece that are open from very early in the morning for the morning rush hour, but there are shops that are open 24/7 for those who have been out late night and just wanted to eat something other than Souvlaki :). Just a few ingredients are needed for this delicious sweet pastry. Hope you enjoy 🙂 Foodzesty
