Ingredients

  • 1 lbspaghetti
  • 1/2 cupchicken broth or stock
  • 1/4 cupolive oil, extra virgin
  • 4garlic cloves, chopped or sliced. However you like it.
  • 1sprinkle of dried oregano
  • 1fresh parsley coarsely chopped
  • 1head of broccolini, ends cut off and washed well. You can also chop in half if you want.
  • 1sprinkle of crushed red pepper. Optional
  • 1salt and pepper to taste
  • 1Fresh grated parmesan cheese

Steps

  1. 1

    Bring a pot of salted water to a boil. Cook spaghetti or pasta of choice according to package directions. Drain and set aside.

  2. 2

    In a separate skillet add olive oil and garlic. Cook on medium low. Do not brown the garlic.

  3. 3

    When oil has cooked with garlic for about 5 minutes add chicken broth or stock and broccolini. Simmer until broccolini is tender but not mushy. You may have to add more oil and chicken broth.

  4. 4

    When broccolini is fork tender add your pasta and toss with oil garlic and broccolini. Add oregano, parsley and crushed red pepper. Cook until warmed through. Season with salt and pepper to taste.

  5. 5

    Plate your pasta and sprinkle with grated parmesan cheese. Serve with a warmed slightly toasted loaf of buttered Italian bread, sliced.
