For a long time I thought radishes were boring and pointless. My partner, who is a chef, would order me food with "no radishes!" However, I discovered the art of pickling vegetables and this recipe turns a dull vegetable into something truly delicious.

For a long time I thought radishes were boring and pointless. My partner, who is a chef, would order me food with "no radishes!" However, I discovered the art of pickling vegetables and this recipe turns a dull vegetable into something truly delicious.

Ingredients

  1. 1 bunchRadish
  2. 3/4 cupWhite wine vinegar
  3. 3/4 cupWater
  4. 3 tbspHoney
  5. 2 tspSalt
  6. 1 tspChilli flakes/garlic/mustard, fennel, coriander seeds (optional)

Cooking Instructions

    Slice or use a mandolin to slice the radishes. Put them into a jar. Heat up the vinegar, water, honey, to boiling point and then pour over the radishes and let cool. Serve immediately or leave in fridge.

I think there is no need to boil it but you can leave it for 4-5 days ... for good taste ...
