One of the guys is a hunter so I used ground venison he gave me, along with other meats I mixed in.
Steps

Chop up the bacon & cook in pan (not crisp) & remove bacon & set aside

Leave bacon fat in & cook the ground venison or beef & the ground pork & set aside leaving grease in the pan

Dice peppers, onions & garlic & cook in the meat fat.

Add all the meat back in with the sazon, sofrito & recaito & cook for a minute & salt & pepper for taste.

Fill the empanada shell in the middle with just enough room to fold over the edges & pinch

Fry empanadas in 350° canola oil for 3 minutes on each side.
