Ingredients

  1. 2 tbspoil (I use extra virgin olive oil, but my friend who makes this also, uses walnut oil)
  2. 1/4 tspground cinnamon
  3. 1 tspground coriander
  4. 1salt to taste
  5. 1pepper to taste
  6. 16 smallto medium carrots (about 1 1/2 pounds), trimmed, peeled and cut in half lengthwise
  7. 1 tbspfresh thyme leaves

Steps

  1. 1

    Preheat oven to 475°.

  2. 2

    Toss carrots with the oil, coriander, cinnamon, a light dusting of salt and pepper and the thyme leaves.

  3. 3

    Spread onto a cookie sheet and roast 10 to 15 minutes or until just tender. (I prefer mine a little softer, so I roast mine longer.)

  4. 4

    *These go along nicely if you're making a roast.*

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
