A versatile compote, use as pie filling, ice cream topping, or eat as is ( that's what I do)
Steps

Peel rhubarb (if desired) and cut into small pieces.

In a medium saucepan, caramelize sugar until light brown.
- 3
Add Orange juice, then rhubarb.
- 4
Let cook for 5-10 minutes, until the rhubarb is softened and the sugar dissolved.
- 5
Dissolve corn starch with a little water, add to rhubarb compote to thicken.
