This is a super simple side dish to go with any meal you want potatos. The potatos simmer in a flavorful broth and are tossed with garlic butter and herbs for moist delicious little potatos! You can make them ahead of time and just reheat until hot in the microwave.

Ingredients

  1. 2 lbsmall red potatos
  2. 4 tbspmy garlic butter, recipe attached in direction step #3, at room temperature.
  3. 2 tbspfresh chopped herbs, I used chives, basil, thyme and parsley
  4. COOKING OF TzHE POTATOS
  5. 4 cupor more chicken broth, enough to cover potatos
  6. 1 tbspheavy cream
  7. 1 tbspbutter, salted or unsalted

Cooking Instructions

  1. 1

    Scrub potatos clean and cut a strip of skin around potatos off. This allows the potatos to better absorb the broth and garlic butter.

  2. 2

    Combine chicken broth , cream, butter and potatos in a large pot. Bring to a boil and simmer until potatos are tender when pierced with a knife. This will take 15 to 30 minutes depending on the size of the potatos

    Drain potatos and toss with garlic butter and fresh herbs,. Serve hot. Garlic butter recipe attached below. Add more garlic butter if it needs it.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US.
