We started making these a few years ago on game day just for something different instead of the same old same old bratwurst.

We started making these a few years ago on game day just for something different instead of the same old same old bratwurst.
Cooking Instructions

Make a lengthwise slit three fourths of the way through each bratwurst to within 1/2 inch of each end.

Fill with sauerkraut.
- 3
Top with dressing and cheese.
- 4
Place bratwurst in buns.
- 5
Wrap individually in a double thick piece of heavy duty aluminum foil (about 12 inches square).

Grill, covered, over medium hot heat for 10 to 15 minutes or until heated through and cheese is melted.

*You can also use this recipe with fully cooked Italian sausages.*

This is also something that I would do all the time when I raised pigs. I buy pre mixed seasoning packs from a company called Excalibur. These are easily found online from their distributor at Waltons. I have both hand seasoned, and used these in the past. In my opinion, these packs are the way to go. They come with everything you need. These are a quality product, and this helps get a consistent product every time. The seasoning packs are for 25 lbs of meat. I try for a 70/30 ratio of meat to fat. If you prefer to not use beer, substitute with the same amount of ice cold water. wingmaster835 -

No expensive equipment needed if you have a food processor or sharp hatchet. Whole pork shoulder is the perfect blend of lean, marbled and fresh bacon meat for bratwurst. The natural sausage casing is from Amazon, the hand sausage stuffer is a few dollars, the flavor is out of this world, you make a big sausage for $1.10. Dont forget to add 1 Tbs of buckwheat flour as a preservative. The pork shoulder bone makes excellent bean, lentil, pea soup. The gravy is to die for. This is our family recipe. Hobby Horseman -
