Asian Peanut Butter Chicken

Ingredients

  1. 1/4 cuphoney
  2. 3 tbspred wine vinegar
  3. 1/4 cuplow sodium soy sauce
  4. 1/2 tspminced garlic
  5. 1 tspground ginger
  6. 1/2 tspground black pepper
  7. 2chicken breasts, cut into cubes
  8. 1/4 cuplow sodium soy sauce
  9. 1/4 tspground ginger
  10. 5 tbsppeanut butter
  11. 2 tspsugar
  12. 4 cupchicken broth
  13. 1 tspminced garlic
  14. 2 cupbroccoli
  15. 4 tspcornstarch
  16. 4 tbspcold water
  17. 4 tspcider vinegar

Cooking Instructions

    Cut chicken breasts into cubes. Mix the first 6 ingredients together and pour over raw chicken in a large bowl. Cover and refrigerate for at least 1 hour

    In a medium pan, mix the 1/4 cup soy sauce, 1/4 tsp ginger, 1 Tbsp peanut butter, and 2 tsp sugar until well blended. Heat on medium heat

    Stir in the chicken broth and the garlic

    Cook marinated chicken, including marinade, in a separate pan until fully cooked

  5. 5

    Mix fully cooked chicken and marinade into the chicken broth mixture

  6. 6

    Stir in broccoli and cook until heated through

  7. 7

    Cover and simmer for 20 minutes

    Mix in a separate bowl the cornstarch, water, and cider vinegar

  9. 9

    Stir into the chicken mixture until bubbly and thick

  10. 10

    Serve over rice
