I grew up traveling to New England often because I had family there. While I was there, Portuguese Linguica sausage was readily available, and we would always bring back several pounds to freeze and easy throughout the year. I've not been back in years, and Linguica is not available where I live. I found a few different recipes, and put them together, and this is what I came up with. I've given it to several family members, and they all love it.
Linguica

I've not been back in years, and Linguica is not available where I live. I found a few different recipes, and put them together, and this is what I came up with. I've given it to several family members, and they all love it.
Cooking Instructions

Combine red wine, garlic, cumin, oregano, black pepper, salt, smoked paprika, and cayenne pepper. Set off to the side.

Cube pork shoulder and pork fat.
- 3
Thoroughly mix pork fat, pork shoulder, and the wine/spice mixture in a large bowl. Cover with plastic wrap and allow to sit for 24 to 48 hours.

Using a meat grinder with the coarsest grind possible, grind the contents of the bowl and stuff into pork casings making links into the desired length. Allow to sit for an additional 24 hours.

Smoke over hickory wood at 220 to 250°F for 90 minutes.

Linguine all'Amatriciana Linguine all'Amatriciana
This is another classic pasta dish. It only uses a few ingredients. That's why I adore Italian cuisine. They use only a few great ingredients and allow them to work their magic. Take pizza for example, it is just dough, sauce and cheese. I think that also apply to pasta. I mean pasta is also just pasta, sauce and cheese.The main ingredient of this dish is guanciale; it is an old-aged-cured pork cheek. It has loads of wonderful fat, herbs and spices. I personally do not consume pork. So, I used turkey bacon, cooked it with some herbs and spices instead. If you are using guanciale, skip the steps for the turkey bacon.The tricky part is to cook the pasta just 1 min under al dente and finish it off with the sauce. Basically, you will be cooking the pasta and sauce at the same time. Please use pecorino romano. You can get away with parmigiano reggiano tho, but I do find that pecorino has that nutty saltiness taste which permeates the dish nicely. Bucatini is traditionally used. But I still prefer linguine as it is underused and underrated. Without much delay, let's get started with the recipe. Daniel Lim -

This recipe has been sitting in my draft box for a while now, but for some reason I really never got around to making it. Today, it’s very cold and at the moment it’s snowing and I don’t want to make soup, so I decided on this delicious pasta dish which will work just fine. New Year Eve seems to getting closer, and I still haven’t planned out the New Year Eve Menu not really sure what it is I want to make 😦 but one thing I do know for sure is we will be making the classic Greek Cake Vasilopita.During the holidays we tend to make too much food and this means too many leftovers. This year there was wayyy to much leftovers than previous years, the reason as you all know was due to the fact of the passing of our dog Marka, no one really had a appetite for eating big…:( Life must go on and so it will as the New Year approaches.I hope you enjoy this delicious pasta dish not to many ingredients and very quick to make. 🙂 Foodzesty -

This is another last-minute dish, whipped up after my wife requested pasta to go with the chicken I was in the middle of preparing for dinner. I didn't have anything at hand that could obviously go into a pasta, such as sausage or herbs, and only had a bottle of passata and a handful of capers in the pantry. So I decided to forgo both altogether and created something new, with a little bit of inspiration from carbonara, and a little bit of inspiration from caccio e pepe.
