Ingredients

6 servings
  • 1 largeonion (chopped)
  • 1 largecarrot (chopped)
  • 1/3 cupparsley (finely chopped)
  • 1/2 cupcilantro (finely chopped)
  • 6 clovegarlic (minced)
  • 2 tbspginger (finely minced)
  • 1 tspturmeric
  • 1 tspcinnamon
  • 1 tspcumin
  • 1 tspcayenne
  • 2 tsppimentón dulce (or other smoked sweet paprika)
  • 1/2 tsppepper (or more to taste)
  • 2 tspsalt (or more to taste)
  • 28 ozdiced tomatoes
  • 1 1/4 cupred lentils (dry)
  • 8 cupvegetable broth
  • 2 tbspextra virgin olive oil
  • side (garnish)
  • 4limes (cut into small wedges)
  • 1 bunchof cilantro (finely chopped)
  • 6pita breads (or toasted sliced baguette)

Steps

  1. 1

    Heat olive oil in large pot or dutch oven. Sauté onion, carrot, parsley and cilantro until caramelized.

  2. 2

    Reduce heat to medium-low. Stir in the garlic, ginger and all of the spices. Sauté until fragrant; less than a minute.

  3. 3

    Add lentils, tomatoes, and broth. Cover and bring to a boil. Reduce heat to low and simmer for 50 minutes, or until the lentils have cooked thoroughly and soup has thickened. Salt to taste.

  4. 4

    Serve with fresh lime wedges, chopped cilantro and toasted bread of your choice.
